Pineapple Habanero Wing Sauce

Pineapple Habanero Wing Sauce Ingredients

  • 2-6 habanero peppers, more or less for heat level preference
  • 1/2 cup sweet onion, diced
  • 1 cup diced pineapple
  • 1/2-1 cup pineapple juice
  • 2 teaspoons fresh garlic, minced
  • 2 teaspoons kosher salt
  • 1 cup apple cider vinegar
  • 1 tablespoon unsalted butter

Yield: Makes approximately 1 quart


Directions

  1. Remove stems from habaneros and finely chop. For less heat, remove seeds and de-vein (remove white inner part).
  2. Heat a large drizzle of oil and 1 tablespoon of unsalted butter in a medium pot over medium-high heat until butter is melted.
  3. Add chopped habanero peppers, diced onion, minced garlic and 2 teaspoons of kosher salt; cook until softened.
  4. Add diced pineapple and pineapple juice.
  5. Remove from heat and allow to cool for 5 minutes.
  6. Place cooked habaneros, onion, garlic and pineapple in a food processor with apple cider vinegar.
  7. Blend/process until smooth, it’s ok if there are still pineapple chunks.
  8. Pour sauce over chicken wings and toss to coat; or allow to cool before transferring to jars to refrigerate.

Hint: If you want to cut the heat, add more apple cider vinegar or sugar!

  • 1 TBSP unsalted butter

Directions

  • Remove stems from habanero peppers and finely chop.
  • Heat a large drizzle of olive oil and 1 tablespoon of unsalted butter over medium-high heat until butter is melted
  • Add chopped habanero peppers, diced onion, minced garlic and Kosher salt
  • After peppers and onion have softened, add diced pineapple and pineapple juice
  • Remove sauce from heat and allow to cool for 5 minutes
  • Transfer sauce to a food processor or high-speed blender
  • Add apple cider vinegar and process/blend until smooth, don’t worry if there are still some pineapple chunks
  • Pour sauce over wings and toss to coat; or transfer to jars and refrigerate.
