Pieces should be approximately 1 tablespoon
1/2 cup heavy cream, at room temperature
1 teaspoon sea salt (adjust according to taste)

Add granulated sugar to a saucepan over medium-high heat, stirring constantly with a rubber spatula or wooden spoon.
The sugar will form clumps but eventually melt into a thick, amber-colored liquid as you continue to stir. Be careful not to burn it.
Once the sugar is fully melted and has a rich amber color, add the butter pieces; stirring the butter into the caramel until it is completely melted, 2-3 minutes.
The mixture will bubble during this step and the next, so please exercise caution.
Slowly drizzle in the heavy cream while stirring the caramel mixture; it will begin to rapidly boil.
Once heavy cream is added and mixture is rapidly boiling, leave undisturbed and allow to boil for 1 minute.
It will rise in pan as it boils, so keep an eye on it
After mixture boils for 1 minute, remove from heat; stir in salt (to desired taste)
Transfer to serving container and allow salted caramel sauce to cool for 10 to 15 minutes (it will thicken as it cools)
